Ruzie in de Kleinstesoepfabriek
Twist De Kleinstesoepfabriek in Leek maakt van botten getrokken biologische soepen. Hoogoplopende ruzie tussen de twee eigenaren bedreigde het voortbestaan.
Botten, groente, kruiden. Al sinds maandag staat de bouillon te trekken, nu is het vrijdag. „Dit is spectaculair.” Michel Jansen staat met beslagen brillenglazen naast de ketel runderbouillon. „We trekken dag en nacht door. Na twee, drie dagen begint de extractie, de smaak uit de botten en het merg gaat in die bouillon zitten.”
Zoals hier, bij Kleinstesoepfabriek in Leek, Groningen, gebeurt het in Nederland bijna nergens meer. Elders gebruiken ze een soort vleespasta, die aangelengd wordt met water. Hier is de bouillon bone broth – van botten getrokken.
„We draaien mooie soepjes, we draaien prachtige bouillons”, zegt Jansen. Het gaat lekker. Wéér lekker. Jansen komt koud uit een vechtscheiding met zijn nu ex- compagnon Willem Versteeg. Een bitter loopgravengevecht met twee verliezers, zoals ze allebei zeggen. Versteeg werd uiteindelijk uitgekocht.
Jansen, uit Bilthoven, 1963, was hulpkok, imker en biologisch marskramer voordat hij in de soep terechtkwam. Hij ging in zee met Versteeg, voedselfabrikant uit Brabant, die fabrieken en machines had. Versteeg kon de financial controls doen, de sales en de logistiek. Jansen heeft een persoonlijkheidstest gedaan. „Die saleskant heb ik niet”, zegt Jansen.
Achteraf was het een botsing tussen twee types ondernemer. Jansen, de soepprofessor, overal en altijd op zoek naar nieuwe smaken, nieuwe soepjes. En de ondernemer Versteeg. De scheidingspapieren zijn ondertussen getekend. Jansen heeft er veel van geleerd, zegt hij.
Ook Willem Versteeg heeft de periode achter zich gelaten. Hij is met diverse bedrijven actief in onder meer stamppotten, koffie en kokosmelkyoghurt. Het avontuur met Kleinstesoepfabriek in Groningen is voorbij. „Doodzonde”, zegt hij. „Ik maakte zijn soepen sinds 2010”, zegt Versteeg. „Ik heb de omzet in zes jaar tijd acht keer zo groot gemaakt. Wij bouwden aan iets leuks. Drie jaar geleden zei hij ineens niet met mij verder te willen. Een donderslag bij heldere hemel.”
Aanmodderen
Versteeg was voor de helft eigenaar van de Kleinste. Hij wilde meer dan soep alleen. Uitbreiden: kokosmelkyoghurt, kaasfondue. Hij verweefde de soepproductie met zijn Brabantse holding en een klein web van bv’s.
„Ik wilde omzet creëren”, zegt Versteeg. „Er moest professionaliteit in. Hij [Jansen] wilde de focus op soep houden. Het bleef aanmodderen.” Het is goeie soep, biologisch. Maar duur: 3,99 tot 5,29 euro per pot. „Bij de Aldi kost soep 1 euro.” Versteeg wilde een goedkoper merk erbij, in een zak. „Hij wilde er niets van weten. Daar liep het spaak.”
De fabriek in Leek is opvallend leeg. Grote ruimtes, een aantal ketels, personeel bij de vulmachine. Jansen wijst op verouderde productielijnen, tweede- of derdehands machines, gekocht door Versteeg. Ze konden nog jaren mee, zei hij. „Dat is Willems stijl: durf en branie.” Maar Jansen bedoelt: voor een dubbeltje op de eerste rang zitten.
Versteeg werkte met tijdelijke contracten. Nu hebben de medewerkers een cao en pensioenopbouw. Jansen probeert het neutraal en feitelijk te vertellen. De scheidingsovereenkomst bepaalt dat beide partijen niets nadeligs over elkaar mogen zeggen, op straffe van een flinke boete.
Versteeg heeft na enkele gesprekken in overleg met zijn advocaat besloten af te zien van verder commentaar. Hij verwijst naar Theo Terdu, ‘conflictoloog’, gespecialiseerd in het oplossen van onoplosbare conflicten, die naast een curator een rol kreeg in het scheidingsproces. Het was een „faliekante deadlock”, zegt Terdu, waarin Versteeg op zeker moment het plan had om met een nieuw bedrijf, ‘Fijnste Soepfabriek’ geheten, zijn kwelgeest van de markt te drukken.
Soep is wat ons bindt
Er was nergens geld voor. De vorkheftruck was niet onderhouden, er was geen stapelaar. Jansen maakt pompoensoep van door een zorginstelling geteelde pompoenen. „Ik vind dat een bedrijf niet alleen maar commercieel moet zijn, maar ook sociaal en duurzaam. Willem wilde geen zonnepanelen op het dak.” Versteeg vindt de snert van Unox de lekkerste.
Ze hadden geen geld voor zonnepanelen, zegt Versteeg. Jansen wilde een crowdfundactie. Dat kun je niet van de mensen vragen, vond Versteeg. Het was niet het moment voor crowdfunding, en niet voor zonnepanelen.
Kleinstesoepfabriek maakt vanaf de oprichting in 2005 hooggewaardeerde soep. „De beste soepfabriek van Nederland is de kleinste en zo heet hij ook”, schreef culinair journalist Wouter Klootwijk. Aanvankelijk was de soep alleen bij biologische winkels te koop, later ook bij Jumbo en Albert Heijn. Jansen exporteert naar Zwitserland en Japan. Binnenkort volgt Duitsland, onder de merknaam Kleinstesuppenfabrik.
„De soep ligt overal”, zegt Versteeg. „Ik kan je één ding zeggen: dat komt door mij. Als het aan Michel lag, lagen we nog steeds alleen maar bij de biologische groothandel.”
De fabriek heeft 39 soepen in het assortiment, van Groningse mosterdsoep en tomatensoep à la Johannes van Dam tot Thaise tom kha en hete berglinzensoep uit Goa. Jansen at clam chowder met uitzicht op Alcatraz in San Francisco, shabu shabu bij een Chinees en duizendjarige Arabische soep. Soep is een mondiaal gegeven, zegt Jansen. Soep is wat ons bindt.
Het soepseizoen komt en gaat met regen en kou. Vanaf september, oktober. „Zo’n week heb je nodig”, zegt Jansen. „Boem! Dan springt die behoefte aan soep aan. Nattigheid, wind, de trui weer aan. Dan schieten mensen in de soepmodus.”
Sloten vervangen
In februari 2017 meldde Dagblad van het Noorden de breuk tussen de soepcompagnons, na „twee jaar van redetwisten”. Er bleken tal van pesterijtjes.
Versteeg wilde de productie naar Eindhoven halen. Hij stuurde een incasso- advocaat uit Veghel naar het noorden om beslag te leggen op machines. Dat mislukte. Een etiketteermachine ging juist van Brabant naar Leek. Dom, zegt Versteeg nu: „De fabriek daar is zo vochtig dat de etiketten scheef zakten.”
Jansen wilde Versteeg op een zonder hem belegde aandeelhoudersvergadering ontslaan, zegt Versteeg. Versteeg was niet aanwezig omdat die zijn post niet
ophaalde, zegt Jansen. Bij de Kamer van Koophandel heeft Versteeg moeten praten als Brugman om het schrappen van zijn naam ongedaan te maken.
Ze belden met elkaars klanten en relaties: doe geen zaken met Jansen/Versteeg, die kan er niks van/is niet te vertrouwen. Jansen liet de bedrijfstelefoon van Versteeg blokkeren. Op het dieptepunt, één van de dieptepunten, december 2017, stonden Versteeg en zijn zoon in Leek op de ramen te kloppen. Jansen had de sloten vervangen. Na tussenkomst van de politie gingen Versteeg en zijn zoon naar FC Groningen-PSV.
Henneppoeders voor senioren
Nu zijn Versteeg en Jansen eindelijk van elkaar af. Versteeg moet opnieuw beginnen, zegt hij. „Zorgen dat je weer aan de bak komt. We kunnen weer lekker ondernemen.” Hij heeft een nieuw bedrijf, Passion Food Trade, de bedrijven Blend- in en Kleinste Keuken zijn nog in de lucht. Versteeg maakt fonds, pesto, droge soepen, zeewier- en henneppoeders voor senioren en sportpannenkoeken, onder andere.
Jansen is weer vrij, zegt hij. Hij is met nieuwe, leuke dingen bezig. Coq au vin. Een project met garnalenvissers uit Zoutkamp, een ander met geklaarde boter, een geweldige smaakmaker. Nee, hij heeft geen ‘nieuwe Willem’, voor de harde kant van het zakenleven. „Dat doe ik zelf.”
Waar Jansen de stress te lijf ging met meditatie, deed Versteeg dat met een pot bier, zegt hij. Hij is weer vol in bedrijf. Knallen, doorgaan tot drie uur ’s nachts. Bestellingen, leveringen: zuivel, bouillon, soepen. „Ik ga door met soep.”
Zijn onlangs overleden vader gaf hem op zijn sterfbed een raad mee: „Laat de wrok achter je. Kijk liever naar de toekomst.”
